INGREDIENTS

  • 1 tbsp olive oil
  • 2 garlic cloves, chopped
  • 1 large red onion, chopped
  • 1 capsicum, cut into pieces
  • 1 1/2 cups dry black beans, soaked overnight and cooked - (or 1 can black beans, drained and rinsed)
  • 1 1/2 cups dry red Kidney beans, soaked overnight and cooked - (or 1 can red Kidney beans, drained and rinsed)
  • 1 tbsp tomato paste
  • 4 large fresh tomatoes, chopped into pieces - (or 1 can chopped tomatoes)
  • 500 ml tomato passata
  • 1 tbsp balsamic vinegar
  • 1 Bay leave
  • 1 1/2 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp sweet paprika powder
  • 1 pinch cumin powder
  • 1/2 tsp chili powder - (or more to taste)
  • 1/2 tsp Himalayan salt
  • Large pinch of fresh pepper
  • 1/2 lime juiced
